		<description>i never use shortening; so, this recipe was perfect for me.  i just used two large bananas and found that was quite sufficient.  i also added 1/4tsp vanilla extract.  i was pretty happy with the result, but even though it seemed done, when i went to flip the loaf onto a cooling rack, the top fell off the bread.  not sure what happened?
