
We recently acquired a very large wheel of Spanish manchego cheese. In my office building, there is a Spanish foods import business. What luck! The owners are a brother-sister team and some of the most warm, friendly people I know. Although they usually only sell their products wholesale, the handsome Spaniards opened their treasure chests to the public during an afternoon warehouse sale a few weeks ago.
I got overly excited chatting, passing around my baby, tasting olives and chorizo and downing small squares of cheese. Next thing I knew, I had a large box of goodies including a 3 kilo wheel of the best ever manchego. It is likely that my husband and I alone could eat the entire wheel of cheese in the coming months. To help rid our waistlines of the burden of this glorious cheese, we had a “Come Help Eat our Manchego” party on Sunday. These dates were just one of the taste treats we offered to work through our wheel.
Manchego Stuffed Dates with Truffle Honey

Manchego cheese
Truffle Honey (buy some here or mix some truffle oil with honey to taste)
Make a slice in the side of the date and remove the pit. Insert a slice of manchego cheese. Drizzle with truffle honey. mmmm

Caroline – one of your posts (some months ago) introduced me to Manchego cheese in the first place. It’s SO good. And Manchego cheese stuffed dates with truffle honey? I can only imagine how phenomenal these must have been!

I did a similar thing with dates just the other day! Filled them with parmesan, wrapped a piece of bacon (turkey bacon, 1/3 of a slice) around, toothpicked them and popped them in the toaster oven for about 12 minutes at 450. Holy deliciousness, batman.

I absolutely love Manchego cheese but usually eat it just plain. Sometimes with a little honey drizzled over. But popping slices into dates? Now that is fantastic idea. I can’t wait to try it.

What luck to have that much Manchego cheese. I recently made an apple tart that used both Manchego cheese and honey (not truffle) and it was delicious.
