		<description>Escarole, in my home growing up was never eaten raw.  It was always sauteed or used in soup.  Perhaps that&#039;s why it was hard to &quot;choke&quot; down.  I might try this recipe using endive instead, though.. the bitter with the sweetness of the dates may be a great combo!</description>
