		<description>The photo of your roasted chicken is lovely, I can almost smell the roasted chicken filling my office as I read your post.  Nothing can beat the wonderful aroma of garlic and thyme wafting in the air. 

When roasting chicken, I brine the bird in solution of 1C kosher salt and 1/2C sugar to 1/2 gallon of H20 for an hour, it helps to keep the breast moist, not to mention nicely seasoned chicken.
