These little breakfast rollups fit perfectly in little hands.

Cold cereal is a snack for me, not a breakfast option. I find that breakfast truly is the most important meal of the day and it is my favorite meal.  With two little kids, my morning routine has become more of a short order cook scramble than a relaxing, coffee sipping, paper reading experience. Still, I feel energized and excited to sit with my family, face the day and eat a good meal.

I tend to get in breakfast food ruts. Lately, my go-to has been whole wheat toast topped with natural peanut butter and a half banana. Sometimes, we run out of one of my key ingredients and I find myself agitated and forced to veer off course. I recover by making something completely different.  Now and then, my unexpected breakfast solution is the forced beginning of a new rut!

These breakfast rollups were the result of low food supplies. I scanned the bare fridge and pulled out tortillas, a few eggs and two last slices of bacon. Rather than serving a breakfast burrito, I cut the egg-filled tortilla into these little pinwheels for my daughters. I found that for myself, it was more fun to pick up the little pieces.

Certainly, this is no groundbreaking invention nor a fancy new recipe. But, if by chance you are also in a rut and looking for a new idea, maybe these breakfast rollups will give you a boost.

Easy Breakfast Rollup
Makes 1 serving

1 small flour tortilla (6 inches)
1 egg
2 strips of cooked bacon (or thin sliced ham)
shredded cheese

Heat a small (6 inch) nonstick skillet. Use a fork to scramble the egg in a bowl. Pour into the skillet and cook until the bottom is firm. Add salt and pepper. Flip and cook on the other side. On the tortilla layer the cooked egg, a sprinkle of cheese and bacon (or ham). Roll it up tightly. Slice into 1 inch pieces. Serve.

    Genius! My children thank you. I’ve been all fancy lately, cooking eggs for them and whatnot, but my eggs, even when topped with cheese and cooked to order, have not received the rave reviews I would have liked. I’m pretty sure rolling everything up in a tortilla will be a game changer.
