Description

A better-for-you chocolate treat that is dairy-free, very low sugar, and satisfies cravings. This pudding makes a decadent breakfast, delicious snack, or rich dessert.


Ingredients

Units Scale
  • 1/4 cup high quality cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • pinch of sea salt
  • 2 cups vanilla or unsweetened almond milk
  • 2 Tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup chia seeds
  • Topping Options: fresh strawberries, dried coconut flakes, pecans, whipped cream, chocolate chips

Instructions

  1. In a mixing bowl, whisk together cocoa powder, salt, cinnamon and nutmeg
  2. Add the almond milk, honey, and vanilla, and chia seeds and whisk to combine
  3. Put in the refrigerator overnight or at least 6 hours.
  4. Spoon pudding into serving dishes
  5. Top with desired toppings

Notes

Use a good quality cocoa powder like Valrhona or you can use Ghirardelli.

The puddings will last for 3 days in the refrigerator. You can store individual servings in jars.

The toppings are flexible! Have fun and try different combinations.
