Chocolate Chip Banana Bread

Description

Moist and delicious banana bread speckled with rich chocolate chips. A decadent family favorite recipe.


Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 2 eggs, lightly beaten
  • 3 large, ripe bananas, mashed
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup butter, melted
  • 1 cup semi-sweet chocolate chips, divided

 

 

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease and flour one loaf pan, or spray with nonstick cooking spray.
  3. In a bowl, whisk together flour, soda, salt, and sugar.
  4. Mix in the slightly beaten eggs, mashed bananas, and vanilla.
  5. Slowly stir in the melted butter just until incorporated.
  6. Pour into prepared loaf pan. Bake at 350 for 50-60 minutes or until a toothpick comes out clean from the center.  Take a peek and if the top is starting to brown and looks cooked, insert a toothpick into center to test doneness. If it comes out clean of batter, it is done. If not, cook in 3 minute increments and continue to test for doneness.
  7. Let cool in pans for 5-10 minutes then turn out onto a rack to cool completely.
  8. Store wrapped tightly at room temperature for 4 days. Or, freeze loaf wrapped in plastic wrap and then foil.


Notes

Do NOT over mix this batter. I would not use an electric mixer – just a few circles of the wrist while incorporating the ingredients.

You can use chocolate chunks or mini chocolate chips

You can try dark chocolate chips if you like darker chocolate.
