This week, let’s focus on eating eyeballs. Halloween is the perfect time to create a cocktail that stares back at you!
My girls and the neighbor kids have taken up a new hobby during the pandemic. They are making movies! Since the end of the summer, they have gathered outdoors with a few neighbor friends and used an iPad and iMovie to create several short films.
This Friday, the parents have been invited to a backyard, socially distanced premiere featuring a scary movie for Halloween! None of the parents have been involved so we have no idea what we are in for.
Pandemic gatherings take on such special meaning since social events are rare. Our scary movie premiere is the ideal opportunity to make some fun Halloween food and Halloween cocktails and mocktails.
Last week, I experimented with different Halloween drink recipes and will be sharing them with you this week. The common denominator of our kid and parents drinks are these lychee eyeballs!
Lychee martinis have long been a favorite of mine. I love the fragrant fruit and flavor but have always been turned off by the look and the texture of the fruit. Now I realize why…. they resemble eyeballs.
I’ve created two versions using blueberries or olives for the iris and pupil. The olive and lychee combo is a bit odd flavor-wise but it looks so good that I couldn’t resist.

How To Make Lychee Eyeballs Photos and Tips:
Each canned lychee fruit has a hole where the pit was extracted. Empty the juice out and fill the hole with red jelly using a spoon. Don’t worry about being messy! Oozing jelly looks even gorier.
Then, take an olive or a blueberry and press it into the center. Some of the jelly will ooze out. Even better! Buahahahah!
That’s it! Almost too easy, right? These eyeballs are now ready to float inside your drink of choice. You can also freeze them in large eye cube trays to create eyeball ice cubes.

Ingredients
1 can of Lychee fruit
Strawberry or raspberry jelly
Blueberries or Pimento-stuffed olives
Instructions
- Drain lychees from the can. Reserve juice if you are using it for your drink recipe
- Spoon jelly into the hole in the lychee fruit
- Gently press the olive or the blueberry into the cavity. If using blueberries, keep the stem-side up so it looks like the pupil.
- Use the lychee eyeballs as a garnish in your Halloween cocktails or punch!
Notes
Do not use jam with seeds but clear jelly.
