
Although I am desperately trying to diet a bit, I fell prey to two of these the other day at my friend Marianne’s house. I just cannot resist baked goods. I suppose I will have to just compensate with more exercise!
I have always been a fan of oatmeal cookies. These were especially good with a heaping cup of shredded coconut mixed in with the usual suspects (nutmeg, cinnamon, walnuts and chocolate chips). Marianne got the recipe from a commemorative cookbook made for a friend who was married. Great idea for showers and bachelorette parties… ask each guest to contribute a favorite recipe and make copies for all who attend!

Oatmeal Coconut Chocolate Chip Cookies
1 1/4 cups salted butter at room temperature
3/4 cup packed brown sugar
1/2 cup sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
3 heaping cups uncooked oats
12 oz bag semi-sweet chocolate chips
1 cup walnuts, chopped
1 cup shredded coconut
Preheat oven to 375. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. Stir together in separate bowl flour, baking soda, salt and spices. Add to creamed mixture a little at a time, mixing well. Stir in oats. Fold in nuts, chocolate chips and coconut. Spoon cookies on ungreased cookie sheets. Bake 10-12 minutes. Cool on cookie sheet for 5 minutes. Remove to wire rack to cool completely. Makes about 5 dozen 2 inch cookies.

I just made a batch of these on Sunday (also called Ranger or Scout cookies)! Thought I’d discourage myself by loading them straight into a freezer bag but no such luck. It has probably slowed my consumption but breakfast and dinner have both ended with a warmed up cookie and some milk ever since. So many favorite things in one cookie- tough to resist.

Always a favorite at our house. I love cocnut in cookies – it keeps them moist. I think I’ll bake a batch today!

I actually NEED to gain weight (breastfeeding a toddler who is allergic to dairy) and these look like the most heavenly way to do it! I literally just pulled them out of the oven and the piping hot one I had was delicious.

Still good the next day! Just wanted to let you know that I used margarine (family dairy allergy) and 2/3 whole wheat flour (I’m a big hippy) and they are still fabulous.

I made these tonight. So yummy! The true test comes in a week, though. Tomorrow I’m delivering these babies to my landlords as a bribe. If these cookies are truly as awesome as I think they are, I’ll be getting my full deposit back! Will keep you posted.

My son is in the Air Force stationed in Qatar and would love to get some home baked cookies. These look good. Sure hope they stay fresh for the journey.

I’ve been looking for the perfect cookie recipe. Something different but still a classic. I made these cookies yesterday for my friends and they were such a hit! They are SO easy to make and are filled with just the right flavors and textures. I’m stealing this and making it my new staple. They will make perfect gifts for the holidays as well !!

I whipped up a small batch of these a few days ago, froze them anticipating to save them to send in a care package and I had to make a whole huge batch today to send to all my favorite friends and family. Yum! They are awesome, even had a few get on the darker side and they were actually incredible that way! Lovely blog, excellent recipe, thanks for sharing!
