Simple and easy. That is the way I am playing my cards these days. It seems funny to even be posting this simplest of recipes since the past days have been filled with endless feasting. My extended family gathered for a wedding and I was reminded that it is not just me who loves food. I come from a people who eat and drink heartily and with gusto!!
I took a break from everything, including photography and blogging so I can’t show you the sweet rolls, beef brisket, scalloped potatoes, cucumber salad, fudge, fresh waffle cones, peach cobbler pomegranate mojitos or blueberry crisp. (Actually, the blueberry crisp is a family favorite and I have blogged about it before.)
Well, I hope this easy bean salad doesn’t feel like a consolation prize after that list. I tossed this together for an easy dinner alongside a few other cold salads. It would also makes good picnic fare, could be sprinkled over greens or eaten with chips.
Doctored Up Black Beans
1 can black beans, drained and rinsed
1 large wedge lime
1/4 teaspoon cumin
sea salt
1 roma or small tomato, diced
1/2 avocado, in chunks
1 Tablespoon fresh chopped cilantro
Drain and rinse the can of beans. Squeeze the juice of 1-2 lime wedges over the beans. Sprinkle cumin and salt and toss. Add tomatoes, avocado and cilantro and toss together.
