Lychee fruit tastes like summer, but looks like Halloween.

Lychee martinis are usually a preferred summer drink for me with the tropical, refreshing flavor of the aromatic fruit. However, the nature of the fruit’s shape and flesh is also ideal for simulating eyeballs, which drags the summer flavor into October, where lychee martinis moonlight as a Halloween cocktail. Dress them up for the season with a pair of edible eyeballs.

Halloween Lychee Martini

Description

Dress up your lychee martini with a pair of edible eyeballs. 


Ingredients

Scale

1 can lychee fruit, juice reserved

Vodka

Vermouth (optional)

For Garnish: 

Strawberry or raspberry jelly

Olives stuffed with pimentos


Instructions

  1. Open your can of lychee fruit and reserve the juice
  2. If you like vermouth, put 1 Tablespoon in your martini glass and swirl it around to coat the glass and dump out the additional vermouth
  3. Put 1 ounce reserved lychee juice and 2 1/2 ounces vodka in a martini shaker
  4. Shake over ice vigorously for at least a minute
  5. Strain into the martini glass
  6. Garnish with edible eyeballs. 
  7. For the garnish, fill the hole of the lychee fruit with strawberry or raspberry jelly. Press an olive into the hole. It’s okay if jelly oozes out a bit! Even spookier!
